  • With 100 layers of 1095 and 15n20, this gyuto incorporates a subtle forged hollow kurouchi (forge finish) behind the bevels for added food release. Hardned and tempered with versatility in mind, the knifes bevels were flatned and polished on whet stones before being etched to reveal the damascus pattern in the steel. The edge is then sharpend using whet stones.  The knife itself maintains an edge length of 225mm and a total blade length of 231mm, coming in at 60mm deep at heel, with a 5mm - 1mm distal taper through spine. The main body of the handle is made up from locally souced Laburnum, and contains a bolster of 5000 year old Bog Oak, along with a section of stabalised Ash. The handle is 130mmx25x25mm, with a gentle taper in towards the heel of the knife. The gyuto weighs a total of 202 grams.

  • Forged from 100 layers of high carbon tools steel, this 15n20 and EN42J Nakiri incorporates a forged hollow behind the bevels for reduced weight and added food release. Although Nakiri's are generally forged thinner, this one maintains a slightly thicker profile for added robustness, that when combined with a hollow behind the bevels should still enable it to perform at a similar level to its thinner cousins The total blade length runs for 170mm, with a edge length of 150mm coming in at 73mm deep at the heel, gently tapering to 65mm at the nose. The Nakiri tapers from 5mm - 1mm through the spine. The 130mm long octagonal Wa handle is made from Yew, and includes a 5000 year old bog oak bolster The total weight is 230 grams

  • This 240mmx70mm wrought iron gyuto is the first produced that also displays my makers marks! Flattened, polished and sharpened on whet stones, the gyuto has an EN42J core and plenty of character in the cladding. The gyuto was heat treated with core hardness in mind, which allows for a sharper edge, as the softer wrought iron cladding naturally helps to protect the blade. The gyuto maintains a distal taper through the spine from 5mm - 0.5mm at the tip and includes a 153mm long 5000 year old bog oak handle. The total weight is 287 grams
